Seven Months of Sweet Discoveries

I am passionate about writing on my baking
experience. I tried these recipes and distributed to my apartment. The journey
from July to December reflects both my growth as a baker and the deep
connection between mood, season, and food.
June – The Beginning of a Dream
June marked the start of my baking journey.
Inspired by summer’s freshness, I made a simple yet delightful Lemon Sponge
Cake. The zest added a spark that brightened even the dullest afternoon. My
first few tries had uneven rise, but I soon learned the importance of mixing
air gently into the batter.
**Recipe Highlight**
1 cup flour
¾ cup sugar
½ cup butter
2 eggs
1 tsp lemon zest
½ tsp baking powder Mix, bake at 180°C for 25 minutes, dust with icing sugar.
July – Monsoon Muffins
Rainy evenings and the smell of wet earth
inspired me to bake something comforting — Banana Walnut Muffins. They
were warm, nutty, and perfect with a cup of coffee while watching the rain. My
first attempt was too dense, but after adjusting the baking soda, they turned
light and moist. Lesson: The best comfort foods are born on rainy days.
**Recipe Highlight**
2 ripe bananas, mashed
1 cup flour
½ cup sugar
¼ cup melted butter
½ tsp baking soda
¼ cup chopped walnuts
Mix, pour into muffin molds, and bake at 180°C for 20 minutes.
My friend Dhara loved it and

August – Independence of Flavors
This month’s inspiration came from the
tricolor spirit. I created a ‘Tricolor Fruit Tart’ — kiwi, mango, and
strawberry on creamy custard. It looked vibrant and festive. I learned the
importance of presentation and balance of tartness and sweetness.
**Recipe Highlight**
1 tart base
1 cup custard
Fresh slices of kiwi, mango, and strawberry
Spread custard on tart, arrange fruits in tricolor pattern, chill before
serving.
My brother loved it and got me another
order from his friend.
September – Spiced Stories
With autumn tones setting in, I
experimented with spices and baked Cinnamon Rolls. Rolling the dough
with butter, sugar, and cinnamon was soothing. The glaze melted over warm
rolls, filling the kitchen with cozy fragrance. Lesson: Spices bring warmth not
just to food, but to mood.
**Recipe Highlight**
2 cups flour
1 tsp yeast
2 tbsp butter
¼ cup sugar
1 tsp cinnamon
Warm milk for dough
Roll, fill, bake at 200°C for 20 mins, drizzle icing sugar glaze.
Being my mother birthday – this was
surprise gift for her….
October – Festive Fusion
Diwali month inspired a sweet fusion — Gulab
Jamun Cheesecake. It was challenging but rewarding to blend traditional
Indian flavor with modern baking. Lesson: Creativity shines when we merge the
old and the new.
**Recipe Highlight**
200g crushed biscuits + 50g butter (base)
200g cream cheese
½ cup condensed milk
Chopped gulab jamuns
Set in fridge 4 hours, decorate with rose petals and pistachios.
November – Thankful Baking
This month, gratitude inspired me to bake Pumpkin
Pie. Using fresh pumpkin purée was a challenge, but the result was rich and
aromatic. The spices — nutmeg and cinnamon — made it a cozy November dessert.
**Recipe Highlight**
1 pie crust
1 cup pumpkin purée
½ cup sugar
1 egg
½ tsp cinnamon
¼ tsp nutmeg
Mix, pour, bake at 180°C for 40 minutes.
Being my parents anniversary – it was
sweet gift to them.
December – Winter Wonderland
The final month of the year called for
celebration — Christmas Cookies! I decorated them with icing and colors,
each one a symbol of joy. Baking for friends and family made it even more
special. Lesson: The joy of baking multiplies when shared.
**Recipe Highlight**
2 cups flour
½ cup butter
¾ cup sugar
1 egg
½ tsp vanilla extract
Cut shapes, bake at 180°C for 15 minutes, decorate with icing.
My neighbor Disha carried these to Goa
where she celebrated Christmas
Conclusion
Over these seven months, baking became more
than a hobby — it became a mirror of creativity, discipline, and emotion. Each
recipe taught patience and precision, and every success or failure added flavor
to my learning journey. From monsoon muffins to winter cookies, this diary
reflects how baking connects us to seasons, culture, and community.
I hope my “Manu Bakes” venture
becomes success with blessings of teachers and parents…
